Discover the history and secrets behind one of Guatemala's most iconic dishes: tamales

Alongside a local cook, you will prepare 3 tamales inspired by the Tamalitos de San Antonio recipe, made with heirloom corn, fresh tender beans, chipilín (a local herb), and fresh artisan cheese (queso fresco de monte). We will cook as our grandparents did: in clay pots over a fire, all while enjoying the aromas that fill the air.

To complete the journey, you’ll make the ancestral Maya chirmol, a flavorful roasted tomato salsa prepared on a clay comal and hand-ground on a traditional grinding stone, connecting you directly with centuries of tradition. Your lunch is served with three freshly-cooked (by you!) tamales and a local drink, which may be tiste or a hot cacao, also made during class.

In just an hour and a half, you’ll immerse yourself in the vibrant flavors, culture, and hospitality of Guatemala—an experience to savor and remember forever. Together with the cooks of San Antonio Aguas Calientes and our friends at Kukul Tales, we developed this recipe especially for sharing and enjoying together at our Kakaw studio in Antigua Guatemala. This class is taught together by a Spanish-speaking cook and a bilingual (English and Spanish) guide. Both languages are possible.


Ingredients used for this workshop:

While substitutions are not possible, participants can choose to not include ingredients in their tamales. For example, if you don't want beans, you don't need to include them in your tamales. Or you can decide not to use the salsa.

  • Corn dough prepared with nixtamalization
  • Cooked beans
  • "Chipilín" leaves (a local delicious herb)
  • Fresh local cheese "de monte"
  • Oil
  • Salt
  • Red and green tomatoes
  • For wrapping, "maxán" or "cucuyu" leaves

The tamales are steamed. This recipe is gluten-free.

2-6 participants: $62 per person

We welcome interested creative children from 6 years on for our workshops! Please note that the parent or adult guardian will need to be responsible for children's participation.
